11 ozs ribbon pasta
2 shallots
1 clove garlic cloves
2 Zucchini (yellow and green)
cup Salami
10 black Olives (pitted)
11 ozs Mozzarella
3 Tbsps olive oil
2 cups chopped Tomatoes (can)
cup cream (25%)
2 tsps Caper
1 Tbsp dried oregano
salt

Preparation steps

Cook the pasta in boiing, salted water according to instructions on the packet until al dente.

Peel and finely chop the shallots and the garlic. Wash and trim the zucchini and finely dice.

Cut the salami into thin strips. Dice the mozzarella. Chop the olives.

Divide the shallots into three portions. Fry each portion separately in one tablespoon oil. Mix half of the chopped tomatoes and the capers with the first portion of shallots. Simmer gently, then season with salt and pepper. Fry the zucchini with the second portion of shallots, then pour in the cream and season with oregano, salt and pepper. Mix the salami, olives and the rest of the tomatoes with the third portion of shallots. Gently simmer, then season with salt and pepper. Drain the pasta. greased cookie sheet. Put a good spoonful of each sauce in the middle of the nests and sprinkle mozzarella over the top. Place under a pre-heated broiler for about 10 minutes until the cheese begins to bubble and brown slightly.
