1 Tbsp rosemary
5 slices white bread (from the day before)
5 Tbsps butter

Preparation steps

1.

For the topping: Roughly chop the herbs and finely crumble the bread.  Combine the herbs, breadcrumbs and melted butter in a bowl, and season with salt and pepper. If the mixture is too dry, add extra melted butter. 

2.

Open the oysters and lay on a bed of sea salt in a baking dish. Divide the breadcrumb mixture between the oysters. Place under a 220°C (approximately 425°F) broiler until golden, about 4 minutes. Garnish with lemon slices.

3.

Serve with sparkling wine.
