½ cup unsalted butter
2 cups all-purpose flour
½ cup dried Cranberry
1 Orange (finely grated zest)
¼ cup light brown sugar
1 large egg (beaten)
1 tsp Baking powder
1 tsp ground cinnamon
1 tsp milk
caster sugar

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
2.
Put the butter and flour into a mixing bowl and rub together with your fingertips until the mixture resembles breadcrumbs.
3.
Stir in the cranberries, orange zest, sugar and egg with the baking powder, cinnamon and milk. Mix together well to make a softish dough.
4.
Divide the dough into 8 and shape each piece into a rough mound.
5.
Put onto the baking tray and bake for 15-20 minutes until pale golden. Sprinkle lightly with caster sugar while the cakes are hot. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
