Preparation steps
1.
Preheat the oven to 200 ° C convection.
2.
Rinse fish fillets and pat dry. Rinse leek and halve lengthwise, cut into strips. Blanch tomatoes in boiling water, peel and quarter, remove seeds and dice finely. Rinse and dry bell pepper, halve and remove seeds and ribs, peel with a peeler and dice finely. Peel potatoes, onions and garlic and dice into small cubes. Layer fish, vegetables and bay leaves, alternating, in a baking dish. Season layers with salt and pepper and drizzle with olive oil. Add white wine to the pan and cover. Bake in preheated oven at 200°C (approximately 400°F) for about 35 minutes. Season to taste again.
3.
Serve, if desired, with potato chips.
