Baked Cajun Fish with Vegetables

- 4 potatoes
- salt
- 600 grams white fish fillets (such as cod, ready to cook, skinless)
- 1 garlic clove
- 3 Tbsps olive oil
- 1 pinch Filé powder
- ½ tsp cayenne pepper
- 2 tsps sweet ground paprika
- 1 Tbsp olive oil (for aluminum foil)
- 1 Red Bell pepper
- 2 stalks Celery
- 120 grams green Beans
- 2 scallions
- 3 carrots
- 250 milliliters Vegetable broth
- 50 grams Whipped cream
- 50 grams Crème fraiche
- freshly ground peppers
- 2 Tbsps freshly chopped parsley
Preparation steps
Scrub potatoes thoroughly and cook for 25-30 minutes in boiling salted water.
Preheat the oven to 200 ° C convection.
Rinse fish, pat dry and divide into 4 equal pieces.
Peel garlic, chop finely and mix with oil, spices and 1 pinch of salt.
Place each fish portion onto a piece of oiled aluminum foil, spread with spice paste and fold in foil tightly. Arrange on a lined with parchment paper baking sheet and bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes.
Rinse and peel vegetables as needed and cut into small cubes or pieces. Place into a steamer and steam over a pot of boiling broth, covered, for about 5 minutes. Lightly season with salt and pepper.
Whisk sour cream with creme fraiche, season with salt and pepper.
Drain potatoes and let evaporate, cut crosswise and press lightly apart. Fill with some of sour cream mixture and sprinkle with freshly chopped parsley.
Remove fish from the oven and arrange on plates and serve with vegetables and potatoes.
