- 4 Red Beets (each about 200 grams)
- 4 large potatoes (each about 200 grams)
- 2 Tbsps olive oil
- 2 tsps peppercorns
- 2 tsps Coriander
- salt
- 50 milliliters Vegetable broth
- For the sauce
- 2 tart Apple
- 1 Tbsp lemon juice
- 500 grams Quark
- 2 tsps honey
- 1 tsp grated Horseradish (freshly grated or from a jar)
- 1 Tbsp chopped Dill
- freshly ground peppers

- 1 Roasting bag

Preparation steps

Peel beets and potatoes, brush lightly with olive oil. Coarsely crush peppercorns and coriander seeds, combine with 1/2 teaspoon of salt and sprinkle beets and potatoes with the mixture.

Place vegetables in a roasting bag. Add broth and seal well. Place into a rostaing pan and bake in preheated oven at 200°C (approximately 400°F) for about 1 hour.

For the sauce: rinse and quarter apples, core and grate coarsely. Instantly mix with 1 tablespoon of lemon juice. Whisk apples, quark, honey and horseradish until smooth and add dill. Season with pepper and lemon juice.

Cut roasting bag open and take out beets and potatoes. Cut into thick slices and arrange on warm plates. Drizzle with apple sauce and serve.
