For the baked apple
4 small Apple
4 sheets Puff pastry dough (frozen)
egg yolks (for brushing)
Apple jelly (for brushing)
For the salad
250 grams mixed Lettuce
½ green Apple
4 Tbsps lemon juice
1 Tbsp white balsamic vinegar
4 Tbsps sunflower oil
salt
white peppers
1 tsp medium hot Mustard
1 tsp Apple jelly
4 Tbsps Apple juice

Preparation steps

For the baked apple, thaw puff pastry. Preheat oven to 180°C (approximately 350°F). Peel apples and cut out core, taking care not to puncture outer flesh and place each apple on a sheet of puff pastry, fill the apple with apple jelly. Whisk egg yolk and lightly brush dough and apple sides with egg yolk so that apple sides and dough adhere well to each other. Fold dough around apple and press into place. Place on a baking sheet lined with parchment paper and bake for about 15-20 minutes. About 5 minutes before the end of cooking time, brush pastry with apple jelly and continue to bake. Remove from oven and let cool until lukewarm.

For the salad, rinse lettuce and spin dry and tear into bite-size pieces. For the dressing, warm apple jelly in a saucepan and remove from heat. Stir apple juice, lemon juice and balsamic vinegar and mustard into apple jelly and season with salt and white pepper. Gradually drizzle sunflower oil into dressing, while whisking constantly. Cut half of green apple into thin slices. Mix salad with dressing and arrange on plates with baked apple. Garnish with a few slices of green apple and serve immediately.
