- For salad
- 5 hardboiled eggs
- 4 leaves Lettuce
- salt
- freshly ground peppers
- 2 tsps lemon juice
- 5 Tbsps Mayonnaise
- 1 shallot
- 1 Tbsp chopped parsley
- For plating
- 200 grams wax beans
- 1 Tomato
- 8 Cherry tomatoes
- 4 pcs Baguette (with sesame and poppy seeds)
Preparation steps
1.
Peel eggs and chop. Peel shallots and chop finely. Mix egg with shallot and mayonnaise. Season with salt and pepper. Stir in lemon juice and parsley and mix well.

Rinse lettuce leaves and shake dry.
3.
Blanch wax beans in boiling salted water for 10 minutes. Drain and let cool.
4.
Cut large tomato into slices. Halve cherry tomatoes. Cut baguette pieces in half lengthwise.
5.
Place lettuce leaves on the lower baguette halves, top with the egg salad and top that with tomato slices. Place sandwich on plate and place the top half of baguette. Serve the wax beans and cherry tomatoes alongside.
