3 Tbsps Peanut butter
5 Tbsps lemon juice

Preparation steps

Rinse, trim, and finely dice the tomato. Rinse and peel the cucumber. Halve lengthwise, remove the seeds, and finely dice. Rinse and trim the pepper. Halve the pepper, remove the seeds and membranes, and finely dice. Rinse the chili and halve lengthwise. Remove the seeds and membranes and finely dice.

Peel and finely dice the onion. Rinse the mint and pat dry. You can either finely chop the leaves, or leave them whole. Layer the tomatoes, cucumbers, peppers, chili, and mint in a bowl. Halve the avocados and remove the seeds. Peel and dice the avocado, then place on top of the salad. Add the green chili to the salad as a garnish. Mix the peanut butter with the lemon juice, and season to taste with salt and pepper. Drizzle the dressing over the salad, mix gently until combined, and serve.
