Fava beans are a great source of protein for our cells and muscles. They also provide B vitamins, calcium, and iron, while the avocado provides us with valuable fatty acids for a healthy cardiovascular system.

Add some grilled chicken to make these wraps more substantial.

36 ozs fresh Fava bean (in the pod)

2 mint
2 garlic cloves
½ lemon (zested and juiced)
2 Tbsps olive oil
2 Tbsps Crème fraiche
freshly ground peppers
4 pcs Iceberg lettuce
2 Avocados
4 Whole-wheat tortillas

Preparation steps

1.

Remove the beans from the pods and blanch in boiling salted water for about 3 minutes. Shock in ice water then drain. Remove the beans from their skins and place in a large bowl. Rinse the mint, shake dry and pluck the leaves. Peel the garlic, add to the beans along with the mint, lemon zest, 1 tablespoon lemon juice and oil then purée. Stir in the crème fraîche and season with lemon juice, olive oil, salt and pepper.

Rinse the lettuce and shake dry.

Halve the avocados, pit, chop the flesh coarsely or slice. Toss with the remaining lemon juice.

Warm the tortillas in a dry frying pan for about 30 seconds per side. Spread the bean purée over the tortillas then top with lettuce and avocado. Roll up and serve immediately.
