- For the muffins
- 2 ½ cups all-purpose flour
- 2 tsps Baking powder
- ½ tsp Curry powder
- 1 cup grated Parmesan
- ½ cup cooked Bacon (diced)
- 2 cups diced Pumpkin (flesh)
- 2 eggs
- ¼ cup olive oil
- ⅞ cup Sour cream

1 Knife, 1 Cutting board, 1 Mandoline, 1 Tablespoon, 1 Skillet, 1 Wooden spoon, 1 Aluminum foil, 1 Small bowl, 1 Citrus juicer, 1 Sieve
Preparation steps

For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 12 hole muffin tin.

Mix the flour, baking powder, curry powder and cheese in a mixing bowl. Stir in the bacon and pumpkin.
3.
Mix the eggs with the oil and soured cream.
4.
Stir the egg mixture into the dry ingredients until just combined.
5.
Spoon into the tins and bake for about 30 minutes until golden brown.
6.
Serve warm garnished with fried pumpkin slices and fried bacon.
