For the dough
200 grams Pastry flour
120 grams butter
1 egg
salt
For the filling
2 bunches green Asparagus
200 grams Black Forest ham
2 eggs
100 milliliters Whipped cream
200 grams Sour cream
200 grams grated Cheese (such as Emmental or Gouda)
salt
freshly ground peppers
ground Nutmeg

Preparation steps

For the dough, combine all the ingredients in a bowl and quickly knead into a smooth dough. Cover and refrigerate.

For the filling, mix together cream, sour cream, cheese and eggs. Season with salt, pepper and nutmeg.

Roll out the dough to just larger than the tart pan, press the dough into the pan and trim the crust. Place the asparagus in the tart pan alternating with the ham. Evenly spread the cream mixture over the asparagus and ham. Shake the pan gently, so that the cream mixture is evenly distributed. Bake in an oven preheated to 200°C 400°F) until golden brown, about 30 minutes. Remove and serve.
