1 kilogram white Asparagus
salt
1 tsp butter
½ tsp sugar
80 grams gherkins
3 hardboiled eggs
125 grams shrimp (ready to cook)
150 grams Yogurt (0.1% fat)
3 Tbsps Whipped cream
2 tsps Mustard
freshly ground peppers
Nutmeg

Preparation steps

1.

Rinse asparagus thoroughly, peel and cut off ends. Cook asparagus in a pot of lightly salted water with butter and sugar for about 18 minutes until al dente.

Drain asparagus and cut into slices. Peel eggs and cut into slices.

3.

Mix yogurt in a bowl with cream, sugar and mustard and season to taste with salt, pepper and nutmeg.

4.

Mix asparagus, gherkin, egg and shrimp in a bowl, drizzle with yogurt mixture and mix. Arrange on plates and serve. Serve with toast if desired.
