Preparation steps

Preheat oven to 180°C (approximately 350°F). Grease 4 ramekin dishes with butter.

Rinse and peel asparagus. Remove woody ends and halve stalks lengthwise. Boil stalks in salted water with sugar until not quite soft, about 10 minutes, and drain.

For the meringue, beat egg whites with a pinch of salt and pepper until stiff. Spread about 4 tablespoons meringue into each ramekin dish and bake about 10 minutes. Arrange asparagus stalks over baked meringues. Spoon mounds of remaining egg whites on top of asparagus stalks as desired and bake another 10 minutes. Remove from oven, let cool and serve garnished with watercress.
