- 3 centimeters fresh ginger
- 1 garlic clove
- 1 sprig Lemongrass
- 3 scallions
- 1 red chili pepper
- 400 grams mixed Mushrooms (such as shiitake, enokitake, egerling, and oyster mushrooms)
- soybean oil
- 800 milliliters Chicken broth
- 1 Lime juice
- 2 Tbsps light soy sauce
- 1 Tbsp Oyster sauce
- freshly ground peppers
- 2 Tbsps light Sesame seeds
- cilantro (for garnishing)

Preparation steps

Peel ginger and garlic and cut into thin slices. Rinse lemongrass, peel outer layers, trim both ends and chop finely. Rinse and dry scallions and cut into narrow strips. Rinse chile pepper, cut in half lengthwise, remove seeds and finely chop. Clean mushrooms with a kitchen towel and chop, if necessary.

Heat 2 tablespoons of oil in a saucepan. Sauté garlic, lemongrass, scallions and ginger for a few minutes. Add mushrooms and sauté briefly. Add broth and simmer for about 5 minutes on medium heat. Add lime juice, soy sauce and oyster sauce. Season with pepper to taste. Pour soup into bowls, sprinkle with sesame seeds and garnish with cilantro leaves. Serve.
