- 2 green chili peppers
- 3 centimeters ginger (peeled and diced)
- 1 shallot (diced)
- 3 garlic cloves
- 1 Tbsp Shrimp paste
- 2 Tbsps vegetable oil
- ½ stalk Leeks
- 200 milliliters Coconut milk
- 600 milliliters Chicken broth
- 500 grams cold chicken (already cooked)
- 250 grams Rice noodles
- 100 grams Peas
- 200 grams Corn
- salt
- Lime juice
- 1 red chili pepper (cut into thin strips)
- salt
- cilantro (for garnish)

Preparation steps
1.
Cook the pasta according to instructions on the package, strain and drain.

Rinse leeks, trim, cut in half lengthwise and cut into thin strips.
3.
Grind together green chiles, ginger, diced shallots, peeled garlic and shrimp paste in a mortar to form a paste. Cook in hot oil, then deglaze pan with coconut milk and broth. Add leeks, chicken, peas and corn and simmer about 5-6 min. Add pasta and season with salt and lime juice. Serve garnished with cilantro leaves and chile strips.
