Dough 1 large round pizza disc (26 cm; for 4 servings)
1 gram potatoes
salt
150 grams Mushrooms (Button mushrooms, oyster mushrooms ...)
½ bunch Arugula
3 Tbsps olive oil
2 scallions
2 Tbsps coarsely chopped parsley
black peppers
100 grams freshly grated pecorino romano
1 scoop Mozzarella (150 grams)
½ bunch Arugula

Preparation steps

1.

Scrub the potatoes and boil in salted water. Drain potatoes, allow to cool briefly, peel and cut into slices.

Clean mushrooms and cut into slices.

Rinse scallions, trim and cut into narrow rings.

4.

Brush dough with olive oil and top with layers of potatoes, mushrooms and scallions, sprinkling each layer with pecorino and seasoning each layer with salt and pepper and a sprinkle of parsley.

5.

Cut mozzarella into thin slices and cover the pizza evenly with the cheese. Drizzle with olive oil and bake in preheated oven at 180°C (approximately 350°F) for 35 minutes. Serve sprinkled with arugula.
