3 handfuls Strawberry spinach (with the berries)
2 handfuls Arugula
250 grams Mozzarella
5 sprigs thyme
2 sprigs Basil
2 Tbsps balsamic vinegar
2 Tbsps lemon juice
4 Tbsps olive oil
1 pinch sugar
salt
freshly ground peppers

Preparation steps

Remove the berries from the spinach. Rinse the strawberry spinach, pat dry, and remove the stems. Rinse and dry the arugula, then tear into bite-sized pieces. Mix together the spinach and the arugula, then transfer to plates. Drain the mozzarella, cut into slices, then place on top of the salad.

Rinse and dry the thyme and the basil. Sprinkle the thyme, basil, and the berries over the salad. Mix the balsamic vinegar with the lemon juice and oil. Season to taste with salt, pepper, and sugar. Drizzle the dressing over the salad.

3.

Serve the salad with white bread, if you'd like.
