- 2 bunches Soup vegetables
- 1 onion
- 1 kilogram Beef bone
- 1 Tbsp black peppercorns
- 2 bay leaves
- 4 stems thyme
- 6 Tbsps lemon juice
- 300 grams Artichoke hearts (from a jar)

Preparation steps
1.
Halve the onion and saute in a dry frying pan. Chop the soup vegetables. Add the soup vegetables and beef bones. Saute briefly. Pour in 2 liters (approximately 8.5 cups) of water and the spices. Simmer over low heat, partially covered, for 2.5 hours.

Pour the broth through a sieve. Heat the broth and season with lemon juice, salt and pepper.
3.
Drain the artichoke hearts, halve and add to the soup. Heat and serve.
