- 1 Carp (about 1.5 kg, ready to cook)
- 1 bunch parsley
- 2 garlic cloves
- 4 Tbsps olive oil
- salt
- peppers (freshly ground)

Preparation steps

Preheat oven to 180°C (approximately 350°F).

Rinse carp and pat dry. Pluck parsley leaves (reserving stalks), rinse, spin dry and chop coarsely. Peel garlic and chop finely. Mix parsley leaves and garlic with olive oil. Rub carp with oil inside and out, season with salt and pepper. Fill carp cavity with the parsley-garlic mixture and half of the parsley stalks.

Place remaining parsley stalks on a baking tray lined with parchment paper. Place carp on top of stalks. Bake in preheated oven for about 30 minutes. Brush with remaining oil occasionally. Serve on a bed of parsley leaves.
4.
If desired, serve with buttered potatoes.
