- 9 ozs Pastry flour
- 2 large Apple
- 1 oz finely chopped Walnut
- 2 tsps Baking powder
- ½ tsp baking soda
- 1 egg
- 3 ozs sugar
- 6 Tbsps vegetable oil
- 7 ozs Buttermilk
- ½ cup Apple juice
- For preparing
- softened butter (for greasing the muffin tin)

Preparation steps
1.
Grease the wells of the muffin tin with butter.
2.
Peel, core and dice the apples. Combine the flour, diced apples, chopped walnuts, baking powder and baking soda in a large bowl.
3.
In a separate bowl, whisk together the egg, sugar, vegetable oil, buttermilk and apple juice.
4.
Stir the wet ingredients into the dry ingredients and mix well.
5.
Spoon the batter into the prepared muffin tin and bake in an oven preheated to 350°F for 25 minutes, until a toothpick inserted comes out clean. Remove from the oven and cool on a wire rack.
6.
Wrap the cooled muffins with doilies and tie with ribbon for a decorative touch.
