200 grams Pastry flour
1 tsp Baking powder
3 generous pinches cinnamon
150 grams Walnut
100 grams honey
75 grams butter (melted)
2 eggs (separated)
750 grams sour Apple
300 grams Rosehip preserves
3 Tbsps Soy flour
½ whole lemon (zested)

Preparation steps

Mix together the flour, baking powder and cinnamon. Coarsely chop the walnuts and add to the flour mixture. In a separate bowl, whisk together the honey, melted butter and egg yolks. Pour the wet ingredients into the dry and mix well to form a smooth batter.

Preheat the oven to 200°C (approximately 400°F). Grease a springform pan with butter. Pour the cake batter into the pan.

Peel and quarter the apples. Remove the cores and slice thinly. Toss the apples with the rosehip preserves, soybean flour and lemon zest. Whip the egg whites until stiff and gently fold into the apple mixture. Spread the apple mixture evenly over the cake batter and bake for 30 minutes. Remove from the oven and allow to cool slightly. Carefully remove from the springform pan, slice and serve.
