- 4 small Apple
- 80 grams sugar
- Parchment paper
- dried Legume (for blind baking)

Preparation steps

Thaw the puff pastry and separate. Butter each ramekin and line with a sheet of puff pastry. Cut off the excess dough. Trim a parchment circle or paper muffin liner to the size of the ramekin and fit on top of the dough. Fill with dried beans and bake in a preheated oven at 200°C (approximately 400°F) for about 15 minutes. Bake until golden brown. Remove the paper and the beans and let cool.

Rinse the apples and cut into quarters. Remove the core and cut into wedges. Begin to caramelize the sugar with 4 tablespoons of water in a wide pan. Add the apples and cook for 2-3 minutes. Allow to cool slightly and place decoratively in the puff pastry shell. Drizzle with caramel.
