- 400 grams Raspberries (fresh or frozen)
- 8 leaves white gelatin
- 3 tsps Peppermint tea
- 500 milliliters Apple juice
- Fructose (to taste)

Preparation steps
1.
Rinse and dry raspberries (and thaw, if frozen.)

Soak gelatin in cold water for 10 minutes.
3.
Boil peppermint tea with apple juice, let infuse for 5 minutes, pour through a coffee filter and sweeten with fructose to taste.
4.
Squeeze out gelatine and dissolve into hot tea. Add half the raspberries to tea. Pour mixture into small ramekins and cool for 3-4 hrs to solidify.
5.
To serve, briefly dip ramekins in hot water and overturn gelatin onto plates. Serve gelatin with remaining berries and garnish with mint leaves.
