6 sheets red gelatin
600 grams red Watermelon (seedless)
60 grams sugar
1 Tbsp lemon juice
300 milliliters Apple juice (for the filling)
200 grams Cantaloupe

Preparation steps

Soften the gelatine in cold water.

Cut 400 g (approximately 14 ounces) of the watermelon into small cubes and puree with the sugar and lemon juice. Add 500 ml (approximately 17 ounces) to the melon. Squeeze out the gelatin, and place in a pot with 2 tablespoons of the melon mixture. Warm until the gelatin dissolves, stirring often. Add the gelatin mixture to the melon mixture. Using a melon baller, scoop the fruit of the remaining watermelon and cantaloupe. Add the gelée and the melon balls to a large bowl, and chill in the refrigerator for at least 3 hours.
