1 cube fresh Yeast
200 lukewarm milk
80 grams honey
2 eggs
500 grams Pastry flour
125 grams butter
50 grams raisins
150 grams blanched almonds
2 Tbsps Rum

Preparation steps

1.

Crumble the yeast into a bowl and mix with milk, honey, eggs and a pinch of salt. Add the flour and stir everything with the dough hook. Add butter in pieces and knead for another 3 minutes.

Dust with a little flour and allow batter to rise, covered, in a warm place for 30 minutes. Sprinkle raisins with rum. Grease the cake pan well. Lay 20 almonds in the wells at bottom of pan, coarsely chop the rest and mix with the rum-soaked raisins into the batter.

Pour batter into the pan and let rise covered for another 30 minutes. Preheat oven to 180°C (approximately 350°F) and bake 50-60 minutes. Let stand in pan for 5 minutes then invert onto a plate.
