- 50 grams blanched almonds
- 30 grams blanched Hazelnuts
- 20 blanched Pistachio
- 250 grams fine sugar
- 100 grams Glucose
- 6 Tbsps water
- 1 egg white
- 1 drop Almond extract
- 8 large, rectangular Wafer

Preparation steps
1.
Toast nuts in a dry pan. Cool. Combine water with sugar and glucose, bring to a boil and simmer down to syrup (candy thermometer should read 120°C) (approximately 250°F).

Place saucepan with syrup immediately in cold water to stop cooking process. Beat egg white and fold into syrup, beating constantly. Continue beating until mixture is creamy.

Mix coarsely chopped nuts with the mixture. Line baking sheet with baking wafers and spread with nougat mixture, smooth. Cover and let stand for about 12 hours. Cut into small rectangles and serve.
