For the dough
1 kilogram sugar
250 grams Rice flour (can find at a Turkish or Asian specialty grocer)
1 ¼ liters water
¼ tsp Lemon salt (can find at a Turkish or Asian specialty grocer)
Coconut flakes (for dusting)
Kitchenware
1 Dish cloth
2 rectangular Pans (Can also be a glass pan)
1 sharp Knife
dark Almond butter (Unpeeled almonds)

Preparation steps

For the dough: Line the pans with cotton cloths and dust with half the rice flour (¼ of the flour in each pan). Bring sugar, water and remaining rice flour to a boil in a saucepan over high heat. After it first reaches a boil, add lemon salt and leave the resulting syrup to boil over low heat, stirring constantly. Stir until the mixture has a malleable consistency. Using a teaspoon, remove a bit of the mixture and place in ice water. Shape it into a ball in the water with your fingers. If this sample ball is flexible and doesn't break apart after cooling, the mixture is ready.

Pour the hot mixture into the prepared pans and allow to cool a little. Turn the semi-solidified dough upside down from the pan onto a work surface. Remove the cloth and the residual rice flour. Thinly spread the almond butter on the dough, then roll up the dough tightly, starting from the longer side. Sprinkle coconut flakes on the work surface and roll the dough in the coconut. Allow the dough to completely set. Dust a knife with powdered sugar and cut the rolls into bite-size confections. Roll the confections in coconut flakes again, then place them on a plate or store in a cookie tin.
