- 400 grams Tomatoes
- 1 Eggplant
- Bell pepper (1 red and 1 yellow)
- 1 Zucchini
- 1 onion
- 3 garlic cloves
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- 1 tsp dried thyme
- To serve
- Basil

Preparation steps
1.
For the main dish, blanch the tomatoes for a few seconds, rinse cold, peel, quarter, remove the seeds and cut into small cubes.

Rinse and trim the rest of the vegetables, remove the seeds and cut into 1 - 2 cm cubes (approximately 1/2 inch). Peel the onion and garlic and cut the onion into small cubes.
3.
Heat the oil in a large skillet. Add the vegetables (except the tomatoes) and onion and sauté over low heat for 30 minutes, stirring occasionally. Then, crush the garlic and add to the pan along with the tomatoes. Heat through and season with salt, pepper and thyme.
4.
To serve, spoon the vegetables into hollowed out, round zucchinis and serve garnished with basil.
