- 1 chicken (around 1.2 kg, skin removed, deboned, meat chopped)
- 2 cloves garlic cloves (peeled and finely chopped)
- 2 untreated Oranges
- 14 ozs Glass noodles
- 1 Tbsp Corn starch
- 3 Tbsps sesame oil
- 1 Tbsp honey
- light soy sauce
- cayenne pepper
- Garnish
- 1 scallion (only the green parts, rinsed, cleaned and chopped diagonally into very thin rings)

Preparation steps
1.
Finely grate the zest of one orange and remove the zest of the other in strips (using a zester). Juice both oranges.
2.
Mix together the grated orange zest, orange juice, garlic and chicken. Cover and allow to marinade overnight.
3.
Cook the noodles according to the packet instructions.
4.
Remove the chicken from the marinade and drain well. Toss in the cornflour and seal in a wok in very hot oil.
5.
Add the honey, deglaze with the marinade and simmer for 3-4 minutes.
6.
Season with soy sauce and cayenne pepper and add the orange zest strips.
7.
Place the drained glass noodles on plates or a large platter, arrange the orange chicken on top and scatter with the spring onion rings to serve.
