2 red chile peppers (seeds removed, halved)
1 Lime zest
1 Lime juice
2 Lemongrass (roughly chopped)
1 inch fresh ginger (chopped)
4 cloves garlic
1 onion (chopped)
1 teaspoon Turmeric
1 teaspoon Shrimp paste
3 tablespoons Fish sauce
2 cups Coconut milk
32 ounces Halibut fillet (skinned, cut into chunks)
1 large Mango (peeled and diced)
To serve
boiled Rice
To garnish

Preparation steps

1.
Put the chillies, lime juice and zest, lemon grass, ginger, garlic, onion, turmeric, shrimp paste and fish sauce into a blender or food processor and blend to a coarse paste.

Put the paste and coconut milk in a pan and bring to a simmer. Cook gently for 10 minutes, stirring. Add the fish and cook for 4-5 minutes, until the fish is cooked through.

Add the mango and cook for a further 2 minutes.

Place the rice in serving bowls and spoon the curry on top. Garnish with mango slices and coriander.
