- For the cupcakes
- 2 ½ cups self-rising flour (sifted)
- ⅓ cup butter
- 1 cup superfine caster sugar
- 1 ⅓ cups Buttermilk
- 1 egg (beaten)
- 2 Tbsps chunky apple sauce
- 2 tsps ground cinnamon
- For the buttercream
- ⅓ cup unsalted butter (softened)
- 2 cups powdered sugar
- ⅓ cup sweetened condensed milk
- ⅓ cup cream (48% fat)
- To decorate
- ground cinnamon

Preparation steps
1.
For the cupcakes: heat the oven to 200°C (180° fan) 400°F gas 6. Grease 12 muffin tins.
2.
Sift the flour into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
3.
Stir in the sugar, buttermilk and egg until just combined.
4.
Spoon into the tins to half fill them.
5.
Mix together the apple sauce and cinnamon and spoon a little on top of the cake mixture. Cover with more cake mixture.
6.
Bake for about 20 minutes until golden and risen. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
7.
For the buttercream: beat the butter until very soft and creamy. Whisk in the remaining ingredients until smooth and fluffy.
8.
Spoon into a piping bag and pipe on top of the cakes. Sprinkle with cinnamon.
