- For the cupcakes
- 2 eggs
- 1 cup self-rising flour
- ½ cup Almond flour
- 1 tsp Baking powder
- ½ cup butter (softened)
- ½ cup sugar
- ½ tsp vanilla extract
- 1 Tbsp milk
- 1 Tbsp cocoa powder
- 2 tsps hot water
- For the decoration
- 2 ½ cups powdered sugar
- 2 Tbsps hot water
- ½ tsp vanilla extract
- pink Food coloring
- green Food coloring
- yellow Food coloring
- green, pink, and blue sugar sprinkles

Preparation steps
1.
For the cupcakes: heat the oven to 190°C ( 170° fan) 400°F gas 5. Place paper cases in a 12 hole bun tin.

Put all the cake ingredients except the cocoa and hot water in a mixing bowl and beat well until smooth. Put half the mixutre in another bowl and stir in the cocoa powder and hot water.

Spoon the mixture into the paper cases (6 plain and 6 chocolate) and bake for 15-20 minutes until golden and springy to the touch. Remove from the tin and place on a wire rack to cool completely
4.
For the decoration: sift the icing sugar into a bowl and beat in enough water to give a smooth thick frosting. Stir in the vanilla extract until smooth.
5.
Divide the icing into 3 bowls and colour each bowl with the food colourings.
6.
Spread the icing over the cakes and scatter with sugar sprinkles before the icing sets.
