Preparation steps

1.

For the pears, rinse an orange with hot water, pat dry and thinly remove peel (without white skin). Squeeze juice from both oranges and boil in a saucepan with orange peels, add red wine and sugar and mix.

Peel pear, remove core from the bottom and leave stem intact. Add pears to the saucepan until covered with wine mixture. Cook over low heat for 5 minutes. Remove the saucepan from the heat and allow to cool.

Then remove pears from the saucepan with a slotted spoon, drain and cut each into 5-6 slices. Cut blue cheese into thin slices. On four plates, alternately layer pears with blue cheese.

For the sauce, coarsely chop nuts. Toast nuts and sesame seeds together in a hot, dry skillet. Remove and let cool. Pour sugar into the hot pan and allow to melt while stirring, add 3-4 tablespoons water to the pan and stir (Caution: there is a risk of splashing!). Simmer briefly, remove from heat and let cool slightly. Add nuts and sesame seeds to the pan and spread around pears on the plates. Serve immediately.
