- ⅓ cup Wild rice (long grain and wild rice mixed 50:50)
- 1 shallot (finely chopped)
- 1 Tbsp butter
- 2 carrots (diced)
- 1 Tbsp flour
- sugar
- ¼ cup dry white wine
- 2 ½ cups vegetable stock
- 1 ⅔ cups turkey breasts (cut into 1-2 cm slices)
- ⅞ cup cream

Preparation steps
1.
Cook the rice according to the directions on the packet.
2.
Fry the shallot in the butter, add the carrots and fry for a few minutes. Dust with the flour and season with salt, white pepper and a pinch of sugar. Add the wine and the stock, cover and simmer for around 5 min.
3.
Add the meat and simmer for another 5 min. Add the cream and season to takes. Depending on the desired consistency simmer for a few more minutes or add more stock.
4.
Drain the rice and add to the soup. Season to taste and serve.
