- 2 ⅔ cups floury potatoes (peeled)
- 2 Tbsps olive oil
- 1 clove garlic cloves (finely chopped)
- 3 ⅓ cups white fish fillets (skinned, ready to cook, e. g. cod, pollack, diced)
- ¼ cup dry white wine
- ¼ cup double cream
- 2 Tbsps parsley (chopped)
- 6 Tbsps butter (half melted)
- 9 ozs Puff pastry

Preparation steps

Heat the oven to 180°C (160°C in a fan oven), 350F, gas 4 and line a baking tray with grease-proof paper.

Cook the potatoes in boiling salt water for around 25 min. Drain, leave to cool and mash.

Heat the oil in a pan and fry the garlic. Add the fish and fry for a few minutes. Deglaze with the wine and the cream. Season with salt and ground black pepper and simmer on a medium heat for 3-4 minutes. Remove from the heat, leave to cool and stir in the the mashed potatoes along with the parsley and 3 tbsp butter.

Brush the puff pastry sheets with some melted butter and place them on top of each other. Place the fish and potato mixture in a long line on top of the pastry. Fold over the pastry, wrap up and place on the prepared baking tray. Brush with the remaining butter and bake for 30-40 min until golden brown.
