Preparation steps

1.

Soak beans overnight in 1 liter (approximately 4 cups) of cold water. Add beans and water to a pot and cook 30-40 minutes. Rinse green beans, trim and cut into 3 cm (approximately 1 inch) long pieces. Rinse and peel potatoes and cut into bite-size pieces. Peel onion and slice into eight pieces. Cut smoked pork into bite-sized cubes.

Heat clarified butter in a pan and cook pork until browned. Add onions and sauté. Add pork mixture, potatoes and green beans to white beans and cook another 20 minutes. Rinse plums, cut in half, remove pits and stir fruit into pot, briefly heating. Season with salt and pepper, sprinkle with chopped parsley and serve.
