1 ½ cups gluten-free self-rising flour
2 tsps ground cinnamon
½ cup unsalted butter (diced and chilled)
cup light brown sugar
1 large egg (beaten)
6 Tbsps milk
1 ½ cups cooking Apple (peeled, cored and diced)
cup Golden raisins
1 Tbsp brown sugar
For the glaze
2 Tbsps Cider
2 Tbsps Apricot Jam

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a deep 20cm|8" cake tin.
2.
Sift the flour and cinnamon into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
3.
Stir in the sugar, then beat in the egg, followed by the milk until thick and smooth.
4.
Add the apples and sultanas and mix to combine.
5.
Put into the tin and shake gently to level out. Sprinkle over the demerara sugar.
6.
Bake for 30-40 minutes until golden and a skewer inserted into the centre comes out clean. Cool in the tin for 10 minutes, then place on a serving plate or board.
7.
For the glaze: warm the jam and cider in a small pan until the jam melts.
8.
Prick the cake all over with a skewer. Drizzle the glaze over the cake.
