Heat the oven to 190°C (170° fan) 375°F gas 5. Butter a 20cm|8" cake tin.

Sift the flour, salt and spices into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
3.
Stir in the sugar and apples until combined.
4.
Add the eggs and enough milk to make a firm dough. Put into the tin and sprinkle with 1-2 tablespoons sugar.
5.
Bake for 30-40 minutes, until golden brown and springy to the touch. Cool in the tin for 5 minutes before removing. Serve warm or cold.
