¾ cup heavy whipping cream
3 Tbsps powdered sugar
1 tsp grated Lemon peel
0.333 cup cream cheese (softened)
For Lemon Waffles
¼ cup butter
4 eggs (at room temperature; separated)
¼ cup granulated sugar
½ tsp salt
1 cup milk
1 Tbsp fresh lemon juice
finely grated lemon zest
1 ¼ cups flour
½ tsp Baking powder
3 cups fresh Strawberries
1 Tbsp granulated sugar

Lemon cream and crushed berries can be prepared ahead of time.

Preparation steps

For Lemon Cream:

Chill a metal or glass bowl in the freezer.

Add whipping cream, confectioners' sugar, lemon peel and cream cheese to the chilled bowl. Beat on high speed until mixture becomes soft and fluffy. Refrigerate until waffles are ready.

For Lemon Waffles:

Preheat waffle iron or pan.

Melt butter; cool slightly and set aside.

In a medium mixing bowl, beat egg yolk with the sugar and salt. Blend in milk, lemon juice, lemon zest, and butter.

Sift in the flour and baking powder. stirring until just blended. Beat the egg whites until stiff peaks form; using a rubber spatula, gently fold the egg whites into the batter.

Coat the hot waffle iron with non-stick cooking spray. Pour batter into each waffle mold. Cook waffles according to manufacturer's instructions until cooked through and golden brown, approximately 3 to 4 minutes. Repeat process until all the batter is gone.

Rinse strawberries and drain. Remove stems from half of the strawberries. Sprinkle with sugar to taste and crush with a masher. Allow to sit for about 10 minutes.

Serve waffles hot, with a dollop of lemon cream and crushed strawberries. Garnish plate with remaining whole strawberries. Enjoy.
