- 9 cups Green beans (fatter beans halved lengthways, if desired)
- ¾ cup white wine vinegar (to taste)
- 5 tsps sugar
- 1 stick cinnamon
- 2 dried chili peppers (crushed)
- 1 tsp cloves

Preparation steps
1.
Blanch the beans in boiling salted water for around 5-6 minutes, drain, refresh in cold water and leave to drain thoroughly. Layer into preserving jars.

Bring the vinegar to the boil with 500 ml water and the sugar in a saucepan. Break the cinnamon stick into pieces and add it to the liquid together with the chillies and cloves. Add 1-2 tsp salt and a little ground black pepper.
3.
Pour the liquid over the beans. Seal the jars well and sterilise in a steriliser or saucepan for 30 minutes at 90°C, 195°F.
4.
Remove the jars from the water and stand on their lids to cool. Store in a cool, dark place.
