Vegetarian Barbeque

- 600 grams Tofu
- 40 milliliters Canola oil
- 1 tsp sweet ground paprika
- 2 generous pinches Piment d'Espelette (for decoration)

- 350 grams Seitan (-Schnitzel)
- 100 milliliters Vegetable broth
- 2 Tbsps soy sauce
- 4 Tbsps sweet soy sauce
- 3 scallions
- 1 small Cauliflower
- 2 Tbsps lemon juice
- 2 red Bell pepper
- 4 Tbsps olive oil
- ½ tsp ground Turmeric
- freshly ground peppers
- 300 grams Greek Yogurt (0.1% fat)
Preparation steps
Cube the tofu. Mix the canola oil, paprika, espelette pepper and 2-3 pinches of salt. Marinate the tofu in the mixture for about 30 minutes.
Drain the seitan and pat dry with paper towel. Mix the broth and both soy sauces. Marinate the seitan for about 30 minutes.
Rinse and peel the scallions. Cut the light parts into small pieces and the dark leaves into rolls. Rinse the cauliflower and divide into florets. Boil with water and the lemon juice for about 10 minutes. Drain well. Rinse the peppers, halve and cut into strips. Place the peppers and cauliflower in a bowl. Season with turmeric powder, salt and pepper. Mix well. Spread on an aluminum grill pan. Sprinkle with the scallion rolls.
Alternately skewer the tofu and scallion pieces. Season the yogurt with salt and pepper.
Grill the tofu, seitan and vegetables for about 15 minutes. Serve with the yogurt.
