- 300 grams Goat cheese
- 2 Tbsps mixed, chopped Fresh herbs (Parsley, thyme, basil ...)
- 1 lemon (zested)
- olive oil
- salt
- freshly ground peppers
- 4 Tomatoes
- 2 Zucchini
- 4 white Prince mushrooms (or other wild mushrooms)
Preparation steps
1.
Rinse tomatoes and cut off lids, scrape out tomato pulp. Rinse zucchini and cut into 5 cm pieces, scrape out pulp. Clean mushrooms and cut off stems, scoop out insides lightly.

Mix 100 grams (approximately 3 1/2 ounces) of cheese with herbs and salt. Season 100 grams of cheese with salt and pepper. Mix last 100 grams of cheese with 1 teaspoon of olive oil and lemon zest, season with salt.
3.
Stuff tomatoes with lemon cheese, zucchini with pepper cheese and mushrooms with herb cheese. Drizzle vegetables with a little olive oil and serve.
