- 4 Tomatoes (cut into thick slices)
- 1 Zucchini (sliced)
- 2 Red onions (cut into wedges)
- 1 red Bell pepper (deseeded and cut into large chunks)
- 3 Tbsps olive oil
- 1 tsp dried, mixed Fresh herbs
- 4 Muffins (split in half)
- parsley (to garnish)
Preparation steps
1.
Heat the grill (broiler) to its highest setting.

Mix all the vegetables together on a baking sheet. Drizzle with the oil and season with salt and ground black pepper.
3.
Grill for 3-4 minutes, sprinkle with herbs, then carefully turn the vegetables over and grill for another 4 minutes.
4.
Toast the muffins and lay on plates. Top the muffin halves with the vegetables and garnish with parsley.
