- 200 grams Lentils
- Bell pepper (1 green and 1 yellow)
- 1 small Zucchini
- 1 carrot
- 250 grams Oyster mushrooms
- 1 ⅕ liters Vegetable broth
- salt
- freshly ground peppers
- Nutmeg
- ½ bunch parsley
Preparation steps

Soak lentils overnight in cold water.

Next day, rinse bell peppers, halve and remove seeds and ribs, cut into small cubes.

Rinse and dice zucchini. Peel carrot and dice.

Clean oyster mushrooms and dice finely.
5.
Combine drained beans with vegetable stock and bring to a boil. Simmer on low heat for about 45 minutes. Add prepared vegetables, season with salt, pepper and nutmeg. Cover and simmer for further 15 minutes. Season to taste.
6.
Rinse parsley, shake dry and chop finely. Add parsley to soup. Pour soup into bowls and serve.
