Our vegetable soup with chicken, tortellini and parmesan is a healthy filling! The chicken has a high protein and low fat content. The protein is easily digestible in the body and is used, among other things, for building muscles. Broccoli strengthens the eyesight due to the vitamin A it contains and has a positive effect on the skin. In addition, it scores with a lot of vitamin C, which supports the immune system.

Chili and paprika contain the spicy substance capsaicin, which can effectively fight bacteria and fungi and promotes blood circulation.

This colourful dish can be complemented with various seasonal vegetables or prepared with tortellini with a different filling.

1 chicken
1 bunch Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
1 bay leaf
4 Juniper berries
1 chili pepper
3 carrots
1 stalk Leeks
400 grams Broccoli
1 red Bell pepper
250 grams Tortellini with ricotta filling
salt
freshly ground peppers

Preparation steps

Rinse chicken and place into a large pot. Cover with water and bring to a boil. Skim foam. Rinse and dry greens, chop coarsely. Add to chicken and simmer. Add bay leaf, juniper and chile pepper and simmer for about 3 hours on low heat. Add more water, if necessary. Remove meat from pot and let cool.

Strain broth through a sieve and let cool. Skim fat, if necessary.

Peel carrots and cut into slices. Rinse and dry leek, cut into rings. Rinse and dry brocolli, cut off florets. Rinse and dry bell peppers, halve and remove seeds and ribs, cut into small cubes.

Remove chicken skin and tear meat into small pieces.

Bring broth to a boil, add vegetables and meat and simmer for 6-8 minutes. Season with salt and pepper.

Cook tortellini according to package instructions and drain. Place tortellini into soup bowls and top with soup. Sprinkle with Parmesan and serve.
