1 Eggplant

150 grams Cherry tomatoes
100 grams baby Corn (canned)
6 small shallots
150 grams button Mushroom
5 Tbsps olive oil
1 Tbsp sweet ground paprika

Preparation steps

1.

Rinse bell peppers, trim and cut into bite-size pieces. Rinse zucchini and eggplant, trim, cut into thirds lengthwise and cut into bite-size pieces. Rinse cucumbers, cut in half and slice. Rinse tomatoes.

Rinse corn, drain well and cut in half. Peel shallots. Trim mushrooms. Alternately pierce vegetables on wooden skewers.

For the marinade, mix oil in a bowl with paprika, salt and pepper. Brush marinade on skewers and cook for 5-10 minutes on a hot barbecue while turning occasionally.

4.

Meanwhile, toast pita bread on the hot barbeque. Serve with vegetable skewers.
