4 Lettuce
1 yellow Bell pepper
1 Zucchini
1 small Eggplant
30 milliliters olive oil
salt

1 Basil
2 Tomatoes
4 Ciabatta
40 grams shaved Parmesan

Preparation steps

1.

Rinse the lettuce leaves and shake dry. Rinse the pepper, remove seeds and ribs and cut into strips. Trim and rinse the zucchini and eggplant and cut lengthwise into thin slices. Brush with the olive oil.

Heat a grill pan without oil and grill the vegetables in it  8-10 minutes, turning as needed. Season with salt and pepper. In the meantime, rinse the basil, shake dry and pluck the leaves from the stems. Rinse the tomatoes and cut into slices.

3.

Drain the vegetables on paper towels. Cut the bread horizontally and layer with vegetables, tomatoes, basil and Parmesan to make sandwiches.
