- 3 large potatoes (grated)
- 1 egg (beaten)
- ¾ cup all-purpose flour (more if needed)
- ¼ cup Cornmeal
- 1 ½ tsps Baking powder
- ½ tsp salt
- freshly ground peppers
- vegetable oil (for frying)
- To serve
- scrambled eggs
- snipped Chives
- smoked Salmon
- Crème fraiche
- Tomato sauce

Preparation steps
1.
Mix the potatoes, egg, flour, cornmeal, baking powder, salt and pepper to a thick batter. If it is too thin add a little more flour.
2.
Heat the oil in a frying pan to a depth of about 1cm|1/2" until hot.
3.
Drop spoonfuls of the potato mixture into the hot oil, a few at a time; reduce the heat and cook for about 5 minutes on each side, until crisp and golden.
4.
Drain on absorbent kitchen paper and layer with scrambled eggs mixed with chives. Top with smoked salmon and creme fraiche and serve with tomato sauce.
