- 6 cups honey Mushrooms (halved or quartered)
- Oil (for frying)
- ⅔ cup Bacon (diced)
- 1 onion (diced)
- 1 garlic clove (diced)
- ¼ cup thyme (one sprig set aside, leaves torn off and chopped)
- 2 Tbsps butter
- 2 Tbsps flour
- white wine (to taste)
- 1 ⅔ cups vegetable stock (or veal stock)
- ⅞ cup cream

Preparation steps
1.
Fry the mushrooms in hot oil and then remove from the pan. Fry the bacon in the same pan and add the onions, garlic and thyme.
2.
Add the butter and dust with the flour. Allow to brown slightly then quench with the white wine. Add the stock and 100 ml cream and simmer for 5 minutes. Add the mushrooms and braise for a further 10 minutes stirring occasionally.
3.
Whip the remaining cream and season the ragout with salt and ground black pepper. Fold in the cream just before serving and serve garnished with a sprig of thyme.
